Ingredients

- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon zest
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 large potatoes, cut into fries
- 2 tbsp grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato fries with olive oil, Parmesan, paprika, salt, and pepper. Spread on a baking sheet.
- Bake fries for 20 minutes, flipping halfway.
- Mix dill, parsley, lemon zest, garlic powder, salt, and pepper in a bowl.
- Rub salmon fillets with olive oil, then coat with herb mixture.
- Place salmon on another baking sheet and bake for 12-15 minutes.
- Serve salmon with crispy Parmesan fries.
