Description

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 large potatoes, cut into fries
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potato fries with olive oil, Parmesan, paprika, salt, and pepper. Spread on a baking sheet.
  3. Bake fries for 20 minutes, flipping halfway.
  4. Mix dill, parsley, lemon zest, garlic powder, salt, and pepper in a bowl.
  5. Rub salmon fillets with olive oil, then coat with herb mixture.
  6. Place salmon on another baking sheet and bake for 12-15 minutes.
  7. Serve salmon with crispy Parmesan fries.
