- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 2 pounds potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup milk
- 4 tablespoons butter
Instructions
- Preheat your oven to 375°F (190°C).
- Mix breadcrumbs, parsley, thyme, salt, and pepper in a shallow dish.
- Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated chicken on a baking sheet and bake for 25-30 minutes until golden and cooked through.
- While the chicken bakes, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add minced garlic, milk, and butter to the potatoes.
- Mash the potatoes until smooth and creamy.
- Serve the herb-crusted chicken alongside the garlic mashed potatoes.
Notes
- Use panko breadcrumbs for a crispier crust.
- You can use dried herbs if fresh are not available; use 1 teaspoon dried for each tablespoon fresh.
- Ensure the internal temperature of the chicken reaches 165°F (74°C).
