Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 2 pounds potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix breadcrumbs, parsley, thyme, salt, and pepper in a shallow dish.
  3. Dip each chicken breast in the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated chicken on a baking sheet and bake for 25-30 minutes until golden and cooked through.
  5. While the chicken bakes, boil the potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot.
  7. Add minced garlic, milk, and butter to the potatoes.
  8. Mash the potatoes until smooth and creamy.
  9. Serve the herb-crusted chicken alongside the garlic mashed potatoes.
