Ingredients

  • 2 lbs beef spare ribs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season ribs with salt and pepper, then sear until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery until softened.
  4. Stir in tomato paste, thyme, and rosemary.
  5. Return ribs to the pot, add beef broth and bay leaf.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 2.5–3 hours until tender.
  7. Remove bay leaf before serving.

Notes

  • For extra flavor, deglaze the pot with red wine before adding broth.
  • Serve with mashed potatoes or crusty bread.
