- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 1 cup water
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the cooked beef to the slow cooker.
- Add black beans, kidney beans, corn, diced tomatoes with green chilies, taco seasoning, and water to the slow cooker. Stir to combine.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Before serving, sprinkle shredded cheddar cheese on top and let it melt.
Notes
- You can substitute ground turkey for ground beef for a lighter option.
- Serve with tortilla chips or over rice for a complete meal.
