Description

A hearty and flavorful slow cooker cowboy casserole that combines ground beef, beans, and cheese for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 cup water

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Transfer the cooked beef to the slow cooker.
  3. Add black beans, kidney beans, corn, diced tomatoes with green chilies, taco seasoning, and water to the slow cooker. Stir to combine.
  4. Cover and cook on low for 6 hours or on high for 3 hours.
  5. Before serving, sprinkle shredded cheddar cheese on top and let it melt.

Notes

  • You can substitute ground turkey for ground beef for a lighter option.
  • Serve with tortilla chips or over rice for a complete meal.
