Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 lb boneless chicken breast, cubed
- 6 cups chicken broth
- 1 cup orzo pasta
- Juice of 2 lemons
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic and chicken. Cook until chicken is no longer pink.
- Pour in chicken broth and bring to a boil.
- Stir in orzo and reduce heat. Simmer for 10 minutes.
- Add lemon juice, thyme, salt, and pepper. Simmer for 5 more minutes.
- Garnish with fresh parsley before serving.
Notes
- Use fresh lemon juice for the best flavor.
- Leftovers can be stored in the fridge for up to 3 days.
- Add more broth if the soup thickens too much upon reheating.
