A hearty and nutritious beef and vegetable soup made with tender beef chunks, fresh vegetables, and rich broth.
Ingredients

- 500g beef, cubed
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 potatoes, diced
- 1 cup green beans, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown them on all sides.
- Add onions and garlic, sauté until fragrant.
- Stir in carrots, celery, and potatoes.
- Pour in beef broth and add bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add green beans and cook for another 15 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- You can replace beef with chicken for a lighter version.
- For extra flavor, add a dash of Worcestershire sauce.
- Store leftovers in an airtight container for up to 3 days.
