Description
A hearty beef soup made with tender beef, vegetables, and rich broth.
Ingredients

- 500g beef, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1L beef broth
- 2 tbsp olive oil
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until softened.
- Return beef to the pot and add beef broth and bay leaf.
- Simmer for 1 hour or until beef is tender.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, add 1 tbsp flour while sautéing vegetables.
- Leftovers can be stored in the fridge for up to 3 days.
