- 2 lbs beef chuck roast
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F.
- Season the beef with salt and pepper.
- In a large pot, brown the beef on all sides.
- Add onion and garlic, cooking until fragrant.
- Add carrots, potatoes, beef broth, tomato paste, and thyme.
- Bring to a boil.
- Cover and transfer to the oven.
- Cook for 3 hours or until beef is tender.
- Remove from oven and let rest before serving.

- Store leftovers in the refrigerator.
