- 8 oz pasta (penne or fusilli)
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, juiced
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, and smoked paprika.
- Add cooked pasta, corn, and cotija cheese to the bowl. Toss to coat evenly.
- Season with salt and pepper. Garnish with chopped cilantro before serving.
Notes
- For extra flavor, grill the corn before adding it to the salad.
- Substitute feta cheese if cotija is unavailable.
