- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 can (15 oz) chickpeas, drained and rinsed
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the garlic, zucchini, and bell pepper. Cook for another 3 minutes.
- Add the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil.
- Reduce the heat and let it simmer for 20 minutes.
- Stir in the spinach and chickpeas. Cook for an additional 5 minutes until the spinach is wilted.
- Taste and adjust seasoning if necessary. Serve hot.
