  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 can (15 oz) chickpeas, drained and rinsed

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the garlic, zucchini, and bell pepper. Cook for another 3 minutes.
  4. Add the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil.
  5. Reduce the heat and let it simmer for 20 minutes.
  6. Stir in the spinach and chickpeas. Cook for an additional 5 minutes until the spinach is wilted.
