Ingredients

- 1 clove garlic, minced
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup cooked lentils

- 1 tsp dried herbs (thyme, oregano)
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped vegetables and garlic. Cook for 5 minutes.
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add cooked lentils and dried herbs. Simmer for another 5 minutes.
- Season with salt and pepper.
- Serve hot.
