  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, almond butter, honey (or maple syrup), chopped nuts, seeds, vanilla extract, and salt until well combined.
  3. Spread the mixture evenly onto the prepared baking sheet, pressing down firmly to create an even layer.
  4. Bake for 15-20 minutes, or until the edges turn golden brown. Keep an eye on them to prevent burning.
  5. Remove from the oven and let cool completely on the baking sheet for about 30 minutes.
  6. Once cooled, cut into bite-sized squares or bars. If using chocolate chips, sprinkle them on top while the mixture is still warm, and gently press them in.
  7. Store in an airtight container at room temperature for up to one week.
