Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup seeds (pumpkin or sunflower)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the rolled oats, almond butter, honey (or maple syrup), chopped nuts, seeds, vanilla extract, and salt until well combined.
- Spread the mixture evenly onto the prepared baking sheet, pressing down firmly to create an even layer.
- Bake for 15-20 minutes, or until the edges turn golden brown. Keep an eye on them to prevent burning.
- Remove from the oven and let cool completely on the baking sheet for about 30 minutes.
- Once cooled, cut into bite-sized squares or bars. If using chocolate chips, sprinkle them on top while the mixture is still warm, and gently press them in.
- Store in an airtight container at room temperature for up to one week.
Notes
- Feel free to customize the recipe by adding dried fruits, coconut flakes, or different nut butters.
- For a gluten-free version, ensure that the oats are certified gluten-free.
- These bites make a great on-the-go snack or a healthy addition to lunchboxes.
