Ingredients

  • 4 whole wheat tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced (any color)
  • 1/2 cup zucchini, grated
  • 1/2 cup corn (canned or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream or Greek yogurt for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped spinach, bell peppers, zucchini, and corn to the skillet. Sauté for about 5 minutes until vegetables are tender.
  3. Season with salt and pepper to taste, then remove from heat.
  4. Place a tortilla in the skillet, sprinkle half with shredded cheese, and add a layer of the sautéed veggies.
  5. Fold the tortilla over and cook for 2-3 minutes on each side until golden and the cheese is melted.
  6. Repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve with sour cream or Greek yogurt if desired.
