- 8 ounces whole grain pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1 cup bell peppers, diced
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the whole grain pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell peppers, black olives, and parsley.
- Add the cooled pasta to the vegetable mixture.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Sprinkle the feta cheese on top and serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
Notes
- Feel free to add any other vegetables you enjoy, such as zucchini or spinach.
- This salad can be made a day in advance for a quick and easy side dish.
