- 1 bag of baked tortilla chips
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/2 cup shredded low-fat cheese
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup Greek yogurt or low-fat sour cream
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the baked tortilla chips evenly on a large baking sheet.
- In a bowl, mix together the black beans, corn, and diced tomatoes. Spread this mixture evenly over the chips.
- Sprinkle the shredded cheese over the top of the nachos.
- Bake in the preheated oven for about 10 minutes, or until the cheese is melted.
- Remove from the oven and top with avocado slices, jalapeños (if using), and a dollop of Greek yogurt or sour cream.
- Garnish with fresh cilantro and serve with lime wedges on the side.
Notes
- Feel free to add any of your favorite toppings, such as sliced olives or green onions.
- For added protein, consider adding grilled chicken or turkey.
