- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, fresh or frozen
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
- In a large bowl, combine the black beans, corn, bell pepper, avocado, cherry tomatoes, and cilantro.
- Once the quinoa is done, fluff it with a fork and let it cool slightly before adding to the vegetable mixture.
- In a small bowl, whisk together lime juice, cumin, chili powder, salt, and pepper.
- Pour the dressing over the quinoa and vegetable mixture, and toss to combine.
- Serve immediately or refrigerate for up to 2 days.
