Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable broth
  • 2 cups Mixed vegetables
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • 1 pound Chicken breast
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil.
  2. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add garlic and sauté until fragrant, about 1 minute.
  5. Add chicken breast to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  6. Add mixed vegetables to the skillet and cook until tender, about 5 minutes.
  7. Stir in cooked quinoa and lemon juice, mixing well to combine.
  8. Divide into meal prep containers and store in the refrigerator for up to 5 days.
