- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey or lean ground beef
- 1 can (28 ounces) crushed tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces whole wheat lasagna noodles, broken into pieces
- 2 cups fresh spinach
- 1 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh basil, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add ground turkey or beef, cook until browned.
- Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and reduce heat to a simmer. Cook until noodles are tender, about 10-12 minutes.
- Stir in spinach and cook until wilted.
- Ladle soup into bowls and top with dollops of ricotta, Parmesan, and mozzarella cheese.
- Garnish with fresh basil before serving.
Notes
- For a vegetarian option, substitute ground turkey/beef with lentils or mushrooms.
- Add more veggies like zucchini or bell peppers for extra nutrition.
