  • 4 cups low-sodium chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces whole wheat lasagna noodles, broken into pieces
  • 2 cups fresh spinach
  • 1 cup part-skim ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  2. Add ground turkey or beef, cook until browned.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and reduce heat to a simmer. Cook until noodles are tender, about 10-12 minutes.
  5. Stir in spinach and cook until wilted.
