These healthy egg bites are packed with protein and make for a perfect breakfast or snack option. Easy to customize with your favorite veggies and cheese!


Ingredients

  • 6 large eggs
  • 1/2 cup milk (any kind)
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Non-stick cooking spray or muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it with non-stick cooking spray or lining with muffin liners.
  2. In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  3. Fold in the chopped spinach, diced bell peppers, halved cherry tomatoes, and shredded cheese.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  6. Remove from the oven and let cool for a few minutes before gently removing the egg bites from the tin.
  7. Serve warm or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • Feel free to customize the recipe by adding other vegetables or proteins like cooked bacon or sausage.
  • These egg bites can also be frozen. To reheat, simply microwave for 30-60 seconds.
