These healthy egg bites are packed with protein and make for a perfect breakfast or snack option. Easy to customize with your favorite veggies and cheese!
Ingredients

- 6 large eggs
- 1/2 cup milk (any kind)
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Non-stick cooking spray or muffin liners
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it with non-stick cooking spray or lining with muffin liners.
- In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- Fold in the chopped spinach, diced bell peppers, halved cherry tomatoes, and shredded cheese.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
- Remove from the oven and let cool for a few minutes before gently removing the egg bites from the tin.
- Serve warm or store in an airtight container in the refrigerator for up to 5 days.
Notes
- Feel free to customize the recipe by adding other vegetables or proteins like cooked bacon or sausage.
- These egg bites can also be frozen. To reheat, simply microwave for 30-60 seconds.
