- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup parsley, chopped

- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff with a fork and let it cool.
- In a large bowl, combine quinoa, tomatoes, cucumber, bell pepper, and parsley.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Toss well.
- Serve chilled or at room temperature.
