Instructions

  5. Fluff quinoa with a fork.
  6. In a bowl, mix cherry tomatoes, cucumber, bell pepper, olive oil, and lemon juice.
  7. Combine the vegetable mixture with quinoa.
  8. Season with salt and pepper.
  9. Serve chilled or at room temperature.
