Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa, salt, and pepper.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil and sauté vegetables for 5 minutes.
- Combine quinoa and vegetables.
- Drizzle with lemon juice and mix well.

- Use any seasonal vegetables you prefer.
- Can be served warm or cold.
- Store leftovers in the fridge for up to 3 days.
