Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in spinach and tomatoes.
- Add olive oil, garlic powder, salt, and pepper.
- Cook for an additional 5 minutes.
- Serve warm.
