- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat. Cover and simmer for 15 minutes.
- In a large bowl, combine black beans, corn, diced bell pepper, cumin, salt, and pepper.
- Once quinoa is cooked, fluff with a fork and add to the bowl. Mix well.
- Serve warm, garnished with fresh cilantro.

- Use any vegetables you like.
- This dish is great for meal prep.
