- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup broccoli, chopped
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Meanwhile, heat olive oil in a pan over medium heat.
- Add broccoli, bell pepper, and zucchini. Sauté for 5-7 minutes.
- Stir in garlic powder, salt, and pepper.
- Fluff quinoa with a fork and combine with sautéed vegetables.
- Serve warm.
