Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup broccoli, chopped
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Meanwhile, heat olive oil in a pan over medium heat.
  5. Add broccoli, bell pepper, and zucchini. Sauté for 5-7 minutes.
  6. Stir in garlic powder, salt, and pepper.
  7. Fluff quinoa with a fork and combine with sautéed vegetables.
  8. Serve warm.
