Ingredients

  • 1 cup sweet potatoes, diced
  • 1 cup broccoli florets
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup zucchini, sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup chickpeas, drained and rinsed
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes, broccoli, red bell pepper, and zucchini with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread vegetables on a baking sheet and roast for 25-30 minutes, until tender.
