Description

A hearty and nutritious lentil soup made in a crockpot. Packed with protein and fiber, this soup is perfect for a healthy meal.


Ingredients

  • 1 cup dried lentils, rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  2. Transfer the sautéed vegetables to the crockpot.
  3. Add lentils, vegetable broth, diced tomatoes, cumin, paprika, salt, and black pepper to the crockpot.
  4. Stir well to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve hot.

Notes

  • You can add spinach or kale in the last 30 minutes of cooking for extra greens.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
