Ingredients

- 2 cups rolled oats
- 1/2 cup almond butter or peanut butter
- 1/3 cup honey or maple syrup
- 1/2 cup dark chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup dried cranberries or raisins
- 1/4 cup chopped nuts (walnuts, almonds, or pecans)
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey, vanilla extract, salt, and cinnamon.
- Mix well until all the ingredients are fully combined. If the mixture is too thick, add a tablespoon of warm water to help it come together.
- Fold in the dark chocolate chips, dried cranberries, and chopped nuts.
- Line a baking dish with parchment paper and press the mixture evenly into the dish.
- Refrigerate for at least 2 hours to set.
- Once set, remove from the dish and cut into squares or bars.
- Store in an airtight container in the fridge for up to a week.
