  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes. Remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute.
  5. Pour in chicken broth and diced tomatoes. Add thyme, rosemary, and bay leaf.
  6. Return chicken to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Discard the bay leaf. Season with salt and pepper before serving.
