- 1 lb ground turkey or chicken
- 2 cups broccoli florets
- 1 cup diced bell peppers
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cooked quinoa or brown rice
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground turkey or chicken until browned. Drain excess fat if necessary.
- Add broccoli, bell peppers, black beans, cooked quinoa or brown rice, diced tomatoes, garlic powder, onion powder, cumin, salt, and pepper to the skillet. Stir to combine.
- Transfer the mixture into a greased 9×13 inch casserole dish. If using cheese, sprinkle it on top.
- Cover with aluminum foil and bake for 25-30 minutes. Remove foil and bake for an additional 10-15 minutes to melt the cheese if used.
- Let cool for a few minutes before serving. Garnish with fresh herbs if desired.

- Feel free to swap in your favorite vegetables or proteins.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
