A moist and flavorful healthy carrot cake that is easy to make.
Ingredients

- 2 cups grated carrots
- 1 cup whole wheat flour
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup crushed pineapple, drained
- 1/4 cup chopped walnuts
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix grated carrots and crushed pineapple.
- Add applesauce, honey, and eggs; stir well.
- In another bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in chopped walnuts.
- Pour batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in the refrigerator.
- Can be topped with a light cream cheese frosting if desired.
