A simple and healthy banana bread recipe that is moist and flavorful. Perfect for breakfast or a snack.
Ingredients

- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3 ripe bananas, mashed
- 1/4 cup honey
- 1/4 cup Greek yogurt
- 1 tsp vanilla extract
- 2 eggs
- 1/4 cup coconut oil, melted
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flour, baking soda, and salt in a bowl.
- In another bowl, combine mashed bananas, honey, yogurt, vanilla, eggs, and coconut oil.
- Stir dry ingredients into wet ingredients until just combined.
- Fold in walnuts if using.
- Pour batter into loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use very ripe bananas for best sweetness.
- Can substitute honey with maple syrup.
- Store leftovers wrapped tightly at room temperature for up to 3 days.
