Ingredients

  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas, mashed
  • 1/4 cup honey
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix flour, baking soda, and salt in a bowl.
  3. In another bowl, combine mashed bananas, honey, yogurt, vanilla, eggs, and coconut oil.
  4. Stir dry ingredients into wet ingredients until just combined.
  5. Fold in walnuts if using.
  6. Pour batter into loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let cool before slicing.
