A healthy banana bread recipe made with ripe bananas and whole ingredients.

- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup whole wheat flour
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the bananas with a fork until smooth.
- Add melted coconut oil to the bananas and mix well.
- Stir in honey or maple syrup, eggs, and vanilla extract.
- In another bowl, combine baking soda, salt, and whole wheat flour.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in chopped walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store leftovers in an airtight container.
- This bread freezes well.
- Use very ripe bananas for best flavor.
