- 1 bag frozen hashbrowns
- 1 cup shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced bell peppers
- 1/2 cup diced onions
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together hashbrowns, cheese, bell peppers, and onions.
- In another bowl, whisk eggs, milk, salt, and pepper.
- Pour egg mixture over hashbrown mixture and stir to combine.
- Transfer to a greased baking dish.
- Bake for 45 minutes or until set and golden brown.
- Let cool for a few minutes before serving.

- Feel free to add cooked sausage or bacon for extra flavor.
