- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup shredded carrots
- 1/4 cup pumpkin seeds
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- Slice the cherry tomatoes and black olives.
- Shred the carrots using a grater.
- In a large bowl, combine the mixed greens, cherry tomatoes, black olives, shredded carrots, pumpkin seeds, and feta cheese.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve immediately.
