- 1 medium sugar pumpkin
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup heavy cream
- Salt and pepper to taste
- Pumpkin seeds for garnish
Instructions
- Choose a sugar pumpkin and cut it in half, removing the seeds.
- Roast the pumpkin halves in the oven at 400°F (200°C) for about 30 minutes until tender.
- While the pumpkin is roasting, heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
- Once the pumpkin is roasted, scoop the flesh into the pot with the onions and garlic.
- Pour in the vegetable broth and stir in the ground cinnamon and nutmeg.
- Bring the mixture to a simmer and cook for about 10 minutes.
- Use a high-speed blender to blend the soup until smooth.
- Return the blended soup to the pot and stir in the heavy cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with pumpkin seeds.
