- 1 cup corn

- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Choose medium-sized bell peppers for easy stuffing.
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine cooked rice or quinoa, black beans, corn, diced tomatoes, ground turkey or chicken, cumin, paprika, salt, and pepper.
- Stuff each bell pepper with the filling mixture.
- Place the stuffed peppers in a baking dish.
- Sprinkle shredded cheese on top of each stuffed pepper.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Let the peppers cool for a few minutes before serving.
- Decorate the plate with fake spider webs for a spooky presentation.
