Description
Juicy, marinated chicken served in warm pita bread with fresh veggies and a creamy tzatziki sauce.

- 1 lb boneless, skinless chicken thighs
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 4 pieces pita bread
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1/2 cup red onion, thinly sliced
- 1 cup tzatziki sauce
Instructions
- In a bowl, combine olive oil, minced garlic, oregano, cumin, salt, and black pepper. Add chicken thighs and toss to coat. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C).
- Remove chicken from the heat and let rest for 5 minutes. Slice into thin strips.
- Warm pita bread on the grill for about 1 minute on each side.
- To assemble, place sliced chicken on the pita bread, and top with diced cucumber, tomatoes, red onion, and a generous dollop of tzatziki sauce.
- Fold the pita and serve immediately.
Notes
- Feel free to customize toppings with lettuce or feta cheese.
- You can use chicken breast instead of thighs for a leaner option.
