  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pieces pita bread
  • 1 cup cucumber, diced
  • 1 cup tomato, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup tzatziki sauce

Instructions

  1. In a bowl, combine olive oil, minced garlic, oregano, cumin, salt, and black pepper. Add chicken thighs and toss to coat. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  2. Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C).
  3. Remove chicken from the heat and let rest for 5 minutes. Slice into thin strips.
  4. Warm pita bread on the grill for about 1 minute on each side.
  5. To assemble, place sliced chicken on the pita bread, and top with diced cucumber, tomatoes, red onion, and a generous dollop of tzatziki sauce.
  6. Fold the pita and serve immediately.

Notes
