Description

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Pita bread, for serving
  • Sliced cucumbers, for serving
  • Sliced tomatoes, for serving
  • Sliced red onions, for serving
  • Tzatziki sauce, for serving

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper.
  2. Add the chicken thighs to the marinade, coating them well. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  5. Remove the chicken from the heat and let it rest for a few minutes before slicing.
  6. Warm the pita bread on the grill for about 1 minute on each side.
  7. To serve, place sliced chicken on the pita bread and top with cucumbers, tomatoes, red onions, and a generous dollop of tzatziki sauce.
