- 1 lb boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Pita bread, for serving
- Sliced cucumbers, for serving
- Sliced tomatoes, for serving
- Sliced red onions, for serving
- Tzatziki sauce, for serving
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper.
- Add the chicken thighs to the marinade, coating them well. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat a grill or skillet over medium-high heat.
- Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
- Remove the chicken from the heat and let it rest for a few minutes before slicing.
- Warm the pita bread on the grill for about 1 minute on each side.
- To serve, place sliced chicken on the pita bread and top with cucumbers, tomatoes, red onions, and a generous dollop of tzatziki sauce.
