- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 bell pepper, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onion and garlic, cook for 2 minutes.
- Add ground turkey, breaking it into small pieces. Cook until browned.
- Stir in bell pepper, sweet potatoes, paprika, salt, pepper, and oregano. Mix well.
- Transfer mixture to a baking dish. Cover with foil.
- Bake for 25-30 minutes until sweet potatoes are tender.
- Remove foil and bake for 5 more minutes to crisp the top.
- Serve hot.

- For extra flavor, top with shredded cheese before baking.
