A healthy recipe using ground turkey that is easy to prepare.
Ingredients

- 1 lb ground turkey
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 cup diced bell peppers
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup diced tomatoes
Instructions
- In a large skillet, heat a little oil over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in bell peppers and cook for 3 minutes.
- Add ground turkey, cook until browned.
- Mix in black beans, corn, chili powder, cumin, salt, and pepper.
- Add diced tomatoes, simmer for 10 minutes.
- Serve hot.

- This dish goes well with rice or tortillas.
- Adjust spices to your taste.
- Can be stored in the refrigerator for up to 3 days.
