Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Pita bread, for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add ground lamb and cook until browned, about 5-7 minutes.
  2. Stir in garlic powder, onion powder, oregano, paprika, salt, and pepper. Cook for an additional 2-3 minutes until spices are well combined.
  3. In a small bowl, mix together Greek yogurt, lemon juice, dill, and a pinch of salt. Set aside.
  4. To assemble the bowls, divide cooked rice or quinoa among serving bowls. Top with ground lamb, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Drizzle the yogurt sauce over each bowl and serve with pita bread if desired.

Notes

  • Feel free to customize your gyro bowl with your favorite toppings, such as olives or avocado.
  • For a spicy kick, add some red pepper flakes to the ground lamb mixture.
