Description

A simple ground beef meal prep for a week of easy lunches.


Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 4 cups cooked rice

Instructions

  1. Heat a large skillet over medium heat.
  2. Add diced onion and garlic, sauté until soft.
  3. Add ground beef, cook until browned.
  4. Stir in bell pepper, diced tomatoes, chili powder, cumin, salt, and pepper.
  5. Simmer for 10 minutes.
  6. Divide cooked rice into meal prep containers.
  7. Add beef mixture on top of rice.
  8. Cool before sealing containers.

  • Store in the refrigerator for up to 5 days.
  • Can freeze for up to 3 months.
