- 1 cup cooked brown rice or quinoa
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sriracha (optional)
- Salt and pepper to taste
- Green onions or cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant and translucent.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in diced bell pepper and broccoli florets. Cook for another 5 minutes until vegetables are tender.
- Add soy sauce and sriracha (if using), mixing well. Season with salt and pepper to taste.
- Serve the ground beef mixture over cooked brown rice or quinoa in bowls.
- Garnish with sliced green onions or cilantro before serving.
