Ingredients

  • 1 cup mushrooms, halved

  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh basil for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine zucchini, bell peppers, onion, cherry tomatoes, and mushrooms.
  3. In a small bowl, whisk together olive oil, garlic, oregano, salt, and pepper.
  4. Pour the olive oil mixture over the vegetables and toss to coat evenly.
  5. Place the vegetables in a grill basket or directly on the grill grates.
  6. Grill for 10-15 minutes, turning occasionally, until vegetables are tender and have grill marks.
