Description

Deliciously marinated and grilled Portobello mushrooms, perfect for a vegetarian main dish or as a flavorful side.


Ingredients

  • 4 large Portobello mushrooms, stems removed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and black pepper.
  2. Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure they are well coated. Let them marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the mushrooms from the marinade and place them on the grill, gill side down. Grill for about 5-7 minutes.
  5. Flip the mushrooms and grill for an additional 5-7 minutes, or until they are tender and have nice grill marks.
  6. Remove from the grill and let them rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • You can also add cheese on top of the mushrooms during the last minute of grilling for a cheesy twist.
  • Serve as a burger substitute or slice them up for a salad topping.
