Deliciously marinated and grilled Portobello mushrooms, perfect for a vegetarian main dish or as a flavorful side.
Ingredients

- 4 large Portobello mushrooms, stems removed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a small bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and black pepper.
- Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure they are well coated. Let them marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove the mushrooms from the marinade and place them on the grill, gill side down. Grill for about 5-7 minutes.
- Flip the mushrooms and grill for an additional 5-7 minutes, or until they are tender and have nice grill marks.
- Remove from the grill and let them rest for a few minutes. Garnish with fresh parsley before serving.
Notes
- You can also add cheese on top of the mushrooms during the last minute of grilling for a cheesy twist.
- Serve as a burger substitute or slice them up for a salad topping.
