- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested

- 1/2 tsp black pepper
- 1 lb baby potatoes, halved
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix olive oil, garlic, lemon juice, lemon zest, salt, and pepper.
- Coat salmon fillets with half the marinade and let sit for 10 minutes.
- Toss potatoes with remaining marinade, rosemary, and thyme.
- Grill salmon for 4-5 minutes per side until flaky.
- Roast potatoes in a grill basket for 20 minutes, stirring occasionally.
- Serve salmon with herb potatoes.
