  • 1/3 cup hot honey (adjust based on spice preference)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups corn (fresh or frozen, thawed)
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Marinate the chicken in hot honey, olive oil, minced garlic, salt, and pepper for 30 minutes to 2 hours.
  2. Mix corn, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper in a bowl for the salad.
  3. Preheat grill to medium-high heat (400°F or 200°C).
  4. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C). Brush with extra hot honey near the end.
