  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 pita bread
  • 1 cup tzatziki sauce
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 red onion, thinly sliced
  • Feta cheese for garnish

Instructions

  1. In a large bowl, mix olive oil, garlic, oregano, smoked paprika, salt, and pepper.
  2. Add the chicken thighs to the marinade and coat well. Let it marinate for at least 30 minutes, preferably 2-3 hours.
  3. Preheat the grill to medium-high heat. Grill the marinated chicken thighs for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  4. Remove chicken from the grill and let it rest for a few minutes before slicing into strips.
  5. Warm the pita bread on the grill for about 1 minute on each side.
  6. To assemble the gyros, place grilled chicken strips in the center of each pita, then top with tzatziki sauce, diced tomatoes, shredded lettuce, red onion, and feta cheese.
  7. Fold the pita around the filling and serve immediately.

  • For a smokier flavor, use a charcoal grill.
  • You can substitute chicken thighs with chicken breasts, but thighs are more juicy and flavorful.
