- 1 lb boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 pita bread
- 1 cup tzatziki sauce
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 red onion, thinly sliced
- Feta cheese for garnish
Instructions
- In a large bowl, mix olive oil, garlic, oregano, smoked paprika, salt, and pepper.
- Add the chicken thighs to the marinade and coat well. Let it marinate for at least 30 minutes, preferably 2-3 hours.
- Preheat the grill to medium-high heat. Grill the marinated chicken thighs for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
- Remove chicken from the grill and let it rest for a few minutes before slicing into strips.
- Warm the pita bread on the grill for about 1 minute on each side.
- To assemble the gyros, place grilled chicken strips in the center of each pita, then top with tzatziki sauce, diced tomatoes, shredded lettuce, red onion, and feta cheese.
- Fold the pita around the filling and serve immediately.
Notes
- For a smokier flavor, use a charcoal grill.
- You can substitute chicken thighs with chicken breasts, but thighs are more juicy and flavorful.
- Add your favorite toppings like cucumber, olives, or pickled peppers for extra flavor.
