Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub chicken breasts with olive oil, oregano, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side until cooked through. Let rest before slicing.
  4. In a small bowl, mix Greek yogurt, lemon juice, garlic, and dill to make tzatziki.
  5. In a large bowl, combine salad greens, cucumber, tomatoes, red onion, olives, and feta.
  6. Top salad with sliced grilled chicken and drizzle with tzatziki.
